Property rentals in Spain can vary drastically in costs, and there seems to be very little guidance as to acceptable prices for a monthly rental fee. Many properties will be represented directly by the owners, and it is not unusual for such owners to want to be paid cash. The decision to rent on this basis lies totally with the tenant, but bear in mind that a cash rental is unlikely to come with a contract. Rental on this basis in Andalucia will start at around €200 for an inland home.
Agency rentals will be provided with a contract and it is normal for such rentals to be paid directly to the agent or the owner. Agency rentals normally add significantly to the rental costs, and you may find that owners will add up to 50% to cover tax liabilities etc. even though their tax bill is going to be nowhere near this amount.
On short-term rentals, you will expect to pay much more than for longer term rents, but all costs will be included in the amount you pay. Longer-term lets will not include electric, water and phone etc and you will be expected to pay this over and above the agreed monthly rental cost.
